Fish fry marinade | Kukskitchen


There are various recipes to marinate a piece of fish to be fried. I present here two very easy fish marinade recipes. The amount of spices is calculated for 200g of fish. For those with a a high fiery threshold, I suggest doubling the red chilli powder/ paste. :) I use kashmiri chilli when I have it in stock as it gives ur fish fry such a beautiful vibrant colour. If using ordinary chilli powder, use half the amount pls.

Ingredients

Kashmiri chilli powder  - 2 tsp
Turmeric powder - 1/2 tsp
Curry leaves to taste
Salt to taste

Ingredients to grind

Kashmiri chilli powder or red chilli paste - 2 tsp
Turmeric powder - 1/2 tsp
Ginger paste - 1tsp
Garlic paste - 1 tsp
Shallots / chuvannulli - 3-4 small ones
Fenugreek - 1/4 tsp or a pinch if using powder
Curry leaves to taste
Salt to taste








Method

- Clean and prepare your fish pieces. They can be of any size, but same sized ones should go in the pan together preferably for an even fry.
- Rub marinade on to fish pieces making sure it reaches all crevices. 
- Leave the pieces aside for about 10-15 minutes. If leaving for longer, refrigerate.  If planning to leave for long periods of time avoid the salt, please don't forget to add salt before frying. The marinated pieces can be frozen on the day, to be used within 2 weeks.
- I usually shallow fry my fish using about a cup of oil using the curry leaves as a bed so my fish skin doesn't stick to the bottom of the pan. 
- Turn sides after about 2-5 minutes depending on the size of your fish pieces. The botton side should be golden brown at this point. Do the same with the now-bottom side. This gives a beautifully fried fish which is crispy on the outside and soft and succulent on the inside.  If you like your fried fish hard and stiff leave in oil for longer.

    Could you please mention the preparation also, that is how long to marinate and method of cooking; shallow fry or deep fry the fish.
