Black forest berries and white chocolate muffins | Kukskitchen

It was a friend at work's birthday and what better gift than a box of yummy muffins. She absolutely loved the soft and moist black forest berries and white chocolate muffins I made for her. And she deserved only the best.








They are more a big-girl's-muffins. If preferred, add frozen Blueberries, Blackberries or mixed berries instead of black forest berries. Buttermilk gives the muffins a lovely light texture. While making them please make sure the berries are frozen when added to the muffin mixture. so they dont go all runny.









These delicious muffins are best eaten on the day they are baked.

Here is how I made them.

Serves: 12
                               ---------------------------------------------------------------------------------

Ingredients:

1- Plain flour - 2 cups
    Baking powder - 3 tsp
2- Sugar - 3/4 cup
    White chocolate bits - 1 cup
3- Buttermilk or milk - 1 cup
    Eggs - 2
    Vanilla extract - 1 tsp
    Butter, melted, cooled slightly - 100g
4- Frozen black forest berries - 1 cup

Method:

1. Preheat oven to 180°C. Grease a 12 x ½-cup muffin pan or line with muffin cases.
2. Sift flour and baking powder into a large bowl. Stir in sugar and choc-bits.
3. Whisk (3) in another large bowl until well combined. Using a large wooden spoon, stir mixture into dry ingredients until just combined. Gently swirl through frozen berries (take care to not over-mix).
4. Spoon mixture into prepared muffin pan. Bake for 25-30 minutes or until cooked when tested with a skewer. Stand in pans for 5 minutes before turning out onto a wire rack to cool. Lightly dust with icing sugar if desired.
